Banner chili con carne

This Chili con carne recipe is one of my favorite recipes to make. I find this so tasty that I eat it at lot, plus; it is super easy to make!

I have to tell you, I am not a professional cook, I just like to prepare this recipe this way and I like the way it turns out. You can of course adapt the recipe to your liking.

I hope you like this Chili con carne as much as I do!

Ingredients: (for 2-3 portions)

200g brown rice

400g lean ground beef

1 red bell pepper

3 small onions

400g red kidney beans

140g corn (canned)

500ml sieved tomatoes

one small tablespoon of paprika

two tablespoons of oregano

1/4 tablespoon of ground cumin

1/3 tablespoon onion powder

1/3 tablespoon chili flakes (or chili powder)

salt and pepper

1 Bring some water to a boil in a medium sized pot.

2 Add the 200g rice, a pinch of salt and boil for 10 minutes.

(I like to cook the rice using the pasta method, but you can always use your own method ofcourse 😉 )

In the mean time:

3 Chop the three onions.

4 Then take a large pot, pour some olive oil in it and heat it up.

5 Add the chopped onions and bake them until they are softened.

6 In the mean time chop the red bell pepper in small cubes.

7 Add the ground beef to the pot with onions and bake and stir until the ground beef is browned.

8 Add the chopped cubes of red bell pepper and bake for a couple of minutes so that the red bell pepper softens a bit before you add the sieved tomatoes.

9 Pour the sieved tomatoes in with the ground beef mixture and heat it up until it simmers.

10 Strain the red kidney beans and corn in a colander over the sink and wash it with water, then add them to the mixture in the pot.

11 Now add:
one small tablespoon of paprika

two tablespoons of oregano

1/4 tablespoon of ground cumin

1/3 tablespoon onion powder

1/3 tablespoon chili flakes (or chili powder)

Stir and add some salt and pepper, and maybe add some more chili flakes to your taste.

12 Let it simmer over low heat for 5 minutes, stirring occasionally.

13 When the rice is done, strain in a colander over the sink.

14 Now dinner is ready to be served! Enjoy!
